Hardware
The Centerpiece: Kees van der Westen Spirit Three-Group Triplette
Deeply uses one of the most unique modern espresso machines on the market - a Kees van der Westen Spirit Triplette. Kees van der Westen is a Netherlands-based manufacturer that was established in 1984. Since then, they have produced some of the wildest-looking espresso machines out there - check out the website to see for yourself. The machine's aestetic fits perfectly into Deeply's vibe. Not quite a typical hardware element, but worth mentioning - Deeply has a water processing system established to provide maximum control to the water used in their brewing process. Through reverse-osmosis, all mineral content is stripped from the water supply. Deeply then supplements minerals back into the water to control the levels. The result is perfectly consistent and controllable brewing water.

The Crop
Sourcing Style: Responsibly Sourced, Direct Relationships
Roasters: Sey, Drop Coffee, La Cabra, and more...
Deeply has multiple core sourcing and roasting partners, most of which are based in Scandinavia. Coffee is initially harvested from the plant as a cherry - a fruit. Deeply's partners share a common goal to find and bring out the bright, natural, fruit-forward flavors from the coffee bean. To best extract those profiles, the roasts are typically on the front half of the spectrum - from Light to Medium. In addition to flavor, Deeply takes care to work with companies focused on responsible sourcing practices. All coffee supplying the shop comes with detailed pricing information to ensure the price paid to the farmer is fair and reasonable. Their roasting partners also make frequent trips to visit the coffee farms from which they buy. If you enjoy your coffee at Deeply, grab a bag for home!
